I think that next time I will use the cream instead of the cashews. It will be a little sweeter, which I would enjoy. I was wondering if I could triple the sauce and make it ahead of time. Or you can also temper the cream to prevent splitting. Take a few tablespoons of the hot gravy to a small bowl and stir in the cream. Mix and then pour the cream to the butter chicken.
